This recipe is great for using up herbs in bulk. And it will make your house smell great. The salt keeps for ages, and you can double the recipe easily.
- 8 cloves garlic
- About 2 cups of chopped fresh herbs (whatever you have – woody or soft herbs are both fine)
- ½ a cup of sea salt
Peel the garlic and pick the leaves off the herbs. Put in a food processor or blender with the salt until finely ground.
Spread on a paper lined baking sheet.
Put in a 65 degree oven until dried – this will take about 1.5 hours. If you can’t set your oven that low, then preheat it on the lowest heat and turn it off when you put the herb mix in the oven. Let that sit for about 4 hours, it should be dry and crumbly.
Run through food processor again if you want a finer salt.
