Old fashioned rocky road

Makes 4 serves.

You can use chocolate melts (Cadbury’s etc), or a good block chocolate like Lindt.  If you are making a lot of Rocky Road, it may be cheaper to buy a big bag of couverture chocolate online (Callebaut is good).

Equipment

  • Hotplate
  • Baking paper
  • Small round saucepan
  • Spatula
  • Metal bowl
  • Small round takeaway container

Ingredients

  • ½ cup dark chocolate melts
  • ½ cup milk chocolate melts
  • Scant tbsp coconut oil or walnut oil (or any other neutral flavoured oil, like vegetable or canola)
  • 1.5 cups of add ins (choose from halved marshmallows, halved raspberry sweets, roughly chopped red frogs, blackberry pastilles, desiccated coconut, unsalted roasted peanuts, unsalted roasted almonds, unsalted roasted pistachios, roughly chopped Turkish delight, chopped Marie or shortbread biscuits, pretzels)

Put about 3cm of water in the bottom of the saucepan, bring to simmer (not boiling, or the chocolate may seize).

Put the chocolate and oil in a metal bowl and place the bowl on top of the saucepan of water, ensuring bottom of bowl does not touch the water.  Stir every few minutes until melted. Remove from heat and drain saucepan.  Line saucepan with baking paper.

Put add ins directly into bowl, mix and pour into lined saucepan.  Place in fridge until chilled.  Cut into pieces or keep whole.
