Why methods?
We teach techniques, not recipes – because techniques are the building blocks of great cooking. All our chefs are either trade qualified or Le Cordon Bleu trained, and we teach the way we were taught – using a ‘see it, do it’ model. This means that for most classes our chef instructors use ‘running demos’ where they show you the skill and then you copy it – with assistance from your instructor as needed. And in our express classes you will cook at the same time as the chef, following their lead. We will give you an ingredients list and a method for each class, but you do not have to use it.
Our chefs will explain patiently and walk you through each class. And if your dish doesn’t work out, that is OK – we run most classes 3 or 4 times a week so you can always come and try again! Failure is part of learning.
Use these methods below to practice at home.
Butter beans with preserved lemon and charred sourdough
This is based on a Yotam Ottolenghi recipe, from “Ottolenghi Test Kitchen: Shelf Love”

Equipment

- Cooktop
- Frypan
- Tongs

Ingredients
- 3 cloves garlic
- Fat pinch chilli flakes
- ¼ tsp ground coriander
- Skin of ½ of a preserved lemon
- 1 tsp thyme leaves
- 1 sprig rosemary
- 1 tsp tomato paste
- 3 tbsp EVOO
- 200g drained butter beans (about ½ a tin)
- 1 small ripe tomato
- 1 large slice sourdough bread
- Salt and pepper
Method
- Get all ingredients and equipment.
- Char bread:
a. Put 1 tbsp EVOO in pan and heat.
b. Cook sourdough until it begins to char on both sides.
c. Put sourdough aside/pack into container. - Heat remaining EVOO in frypan over low heat.
- Prepare vegetables and add to EVOO:
a. Mince garlic.
b. Finely dice preserved lemon skin (discard flesh).
c. Pick and chop thyme leaves. - Add the following and continue to cook over low heat for about 10 minutes:
a. Chilli flakes
b. Ground coriander
c. Tomato paste
d. Rosemary - Add beans and cook for further 10 minutes.
- While beans are cooking:
a. Grate tomato into a bowl (discard skin). Season to taste.
b. Clean down. - Plate (or into container):
a. Bread
b. Beans and oil
c. Tomato over the top - Clean down, including sweeping floor, wiping and sanitising cooktop and benches, washing and drying up, and cleaning and sanitising knives.
Harissa roasted chicken with charred tomatoes and yoghurt (v – cauliflower and sweet potato)
The charred tomatoes and yoghurt is based on a Yotam Ottolenghi recipe, from “Ottolenghi Test Kitchen: Shelf Love”

Ingredients
- 2 tbsp EVOO
- 1 tbsp red harissa paste (rose harissa paste is lovely, if you can find it)
- 1 tsp honey
- 1 chicken thigh cutlet, bone in and skin on (v – 200g cauliflower steak plus 150g sweet potato)
- 60ml (3 tbsp or ¼ cup) water or vegetable stock
- 100g (1/4 tin) butterbeans or other tinned or soaked white beans
- 2 cloves garlic
- ½ punnet cherry or grape tomatoes
- ¼ tsp cumin seeds
- ¼ tsp brown sugar
- 1 sprig thyme
- 1 sprig oregano
- ½ lemon
- ½ cup very cold thick Greek yoghurt
- ¼ tsp Aleppo pepper flakes
- Salt and pepper
Method
- Preheat oven to 200C.
- Get all ingredients and equipment.
- Season chicken (v – peel, chop and season vegetables).
- Prep veg:
- Mince garlic
- Zest half the lemon rind and peel off a strip using a vegetable peeler.
- (v – cut cauliflower steak and cube sweet potato into bite sized chunks).
- Put following over chicken (v – vegetables) in a lined baking tray (v – vegetables) and mix:
- 1 tbsp EVOO
- 1 tbsp harissa
- 1 tsp honey
- Half the garlic
- 60ml water/stock
- Prep charred tomatoes:
- Make a foil tray.
- Place the following in tray and toss gently:
i. ½ punnet cherry or grape tomatoes
ii. ¼ tsp cumin seeds
iii. ¼ tsp brown sugar
iv. 1 sprig thyme
v. 1 sprig oregano
vii. Lemon peel (not zest)
viii. Remaining garlic
ix. Remaining EVOO
- Place foil tray on baking tray.
- Roast chicken (v – vegetables) and tomatoes:
- Roast in oven for 15 minutes.
- Turn chicken and roast for a further 5 mins until internal temperature of chicken is 75C (v – turn veg and roast until soft).
- Remove chicken (v – vegetables) and cover with foil to rest.
- Taste for seasoning and correct as required.
- Char tomatoes
- Turn up heat to 250C or turn on grill function and roast tomatoes until charred.
- Taste for seasoning and correct as required.
- Prepare yoghurt:
- Mix yoghurt with a fat pinch of salt and pepper and the grated lemon zest.
- Taste for seasoning and correct as required.
- Return to fridge.
- Plate
- Put beans onto plate/container.
- Top with chicken (v – vegetables).
- Add yoghurt to side (if taking home, use a separate container). Top with Aleppo pepper.
- Add tomatoes and sauce over yoghurt, to side.
- Clean down, including sweeping floor, wiping and sanitising cooktop and benches, washing and drying up, and cleaning and sanitising knives.
Chicken Marbella with couscous (v – eggplant and mushroom)
The Chicken Marbella s a Yotam Ottolenghi recipe, from “Simple”

Ingredients
- 2 tbsp EVOO
- 1 chicken thigh cutlet, bone in and skin on (v – 150g eggplant and 100g mushroom)
- 1 clove garlic
- Handful fresh coriander
- 2 tsp red wine vinegar or sherry vinegar
- 4 pitted green olives
- ½ tbsp baby capers
- 3 large medjool dates
- ½ bay leaf
- 1 tbsp red wine
- ¼ small sweet potato
- ½ tbsp pomegranate molasses
- 50g couscous
- 75ml boiling water
- ½ lemon
- Handful mixed herbs
- Salt and pepper
Method
- Preheat oven to 200C.
- Get all ingredients and equipment.
- Cook couscous:
a. Put couscous in a small container/bowl (do not add oil at this point, it will coat the grains and prevent the water from penetrating the couscous).
b. Cover with boiling water.
c. Wrap with clingfilm and set aside - Prepare vegetables:
a. Peel and cut sweet potato into chunks.
b. Mince garlic.
c. Halve olives.
d. Chop dates.
e. (v – chop vegetables into bite sized chunks) - Cook chicken marbella (v – vegetables):
- Rub chicken (v – vegetables) with a fat pinch of salt and pepper.
- Make marinade by adding the following to a small bowl:
i. 1 tbsp EVOO
ii. 1 clove garlic
iii. Handful fresh coriander
iv. 2 tsp red wine vinegar or sherry vinegar
v. 4 pitted green olives
vi. ½ tbsp baby capers
vii. 3 large medjool dates
viii. ½ bay leaf
c. Add all other ingredients and mix.
d. Place on lined baking tray.
e. Cook for 20 minutes or until internal temperature of chicken is 75C (v – until eggplant has collapsed).
f. Taste for seasoning and correct as required.
- Season couscous:
a. Fluff with a fork.
b. Season with salt, pepper, lemon zest, lemon juice and remaining EVOO.
c. Taste for seasoning and correct as required.
d. Tear in herbs and stir again. - Plate:
a. Couscous on plate/in container.
b. Place chicken (v – eggplant and mushroom) and vegetables on top.
c. Spoon over sauce. - Clean down, including sweeping floor, wiping and sanitising cooktop and benches, washing and drying up, and cleaning and sanitising knives.
Salmon skewers with tarator and herb oil (v – roasted eggplant and potato)
This recipe is based on a recipe for salmon skewers and parsley oil from Falastin: A Cookbook by Sami Tamimi and Tara Wigley – foreword by Yotam Ottolenghi

Ingredients
Salmon skewers (v – eggplant and potato skewers)
- 180g salmon fillet (v – ½ large eggplant and 3 baby potatoes)
- ½ lemon
- 1 tsp sumac
- 40 ml (2 tbsp) EVOO
- 1 onion
- 6 cherry tomatoes
- ½ lemon
- ½ tsp ground cardamom
- ½ tsp ground cumin
- ½ tsp paprika
- ½ tsp ground turmeric
Herb oil
- 20 g parsley and other soft herbs (eg dill)
- 1 clove garlic
- 40ml (2 tbsp) EVOO
- ½ lemon
Tarator sauce with potato
- 3 tbsp tahini
- ½ lemon
- 1 clove garlic
- 2 tbsp iced water
- Fat pinch salt
- 2 baby potatoes
Salt and pepper
Method
- Gather equipment and ingredients.
- Preheat oven to 200c.
- Marinate salmon (v – eggplant):
a. Cut salmon (v – eggplant) into roughly 3cm cubes.
b. Put into bowl with all spices, 1 tbsp EVOO, ½ tsp salt, ¼ tsp pepper - Cook potato
a. Quarter and boil in salted water until soft.
b. Toss in oil and a pinch of salt and put in oven for 20 minutes.
c. (v – add eggplant and roast alongside potato until browned. Reserve remaining marinade) - Make tarator by whisking all ingredients together in a bowl. Set aside.
- Make herb oil:
a. Finely chop parsley.
b. Mince garlic
c. Whisk with oil and a fat pinch of salt.
d. Supreme (segment) lemon then cut segments into small slices.
e. Add to oil.
f. Check for seasoning - Make skewers:
a. Heat 1 tbsp EVOO in frypan over medium high heat
b. Cut onions into 3 cm chunks
c. Cook until slightly softened but not browned. The chunks will fall apart a bit, this is fine.
d. Cool.
e. Thread tomatoes, onion pieces and marinated salmon (v – eggplant and potato – toss in reserved marinade first) onto skewers. - Fry skewers in frypan on high heat until charred. (If scaling recipe, cook in batches)
- Add skewers to lined baking tray with potatoes and into oven for 5 minutes until salmon is medium.
- Plate:
a. Rewhisk tarator and spoon onto plate.
b. Top with potato.
c. Top with salmon skewers.
d. Drizzle over oil. - Clean down, including sweeping floor, wiping and sanitising cooktop and benches, washing and drying up, and cleaning and sanitising knives.
Intermediate French - Seared scallops with chorizo oil and carrot and saffron puree

Ingredients
Carrot puree
- 100g carrot
- 50g onion
- 60ml pure cream
- 100ml stock
- Pinch saffron threads
Chorizo oil
- 15 g chorizo
- 2 tbsp EVOO
- 4 basil leaves
- ¼ small red chilli
- 2 macadamia nuts
Scallops
- 4 scallops
- 1 tbsp EVOO
- ½ lemon
- Chives or picked herbs, to serve
Method
- Get all ingredients and equipment.
- Make carrot puree:
a. Chop carrots and onion into chunks.
b. Put carrots in small saucepan with cream, stock, saffron and onion and cook until cream is almost cooked out.
c.Blend, pass.
d. Adjust for seasoning.
e. Rinse saucepan, return puree to saucepan and keep warm. - Make chorizo oil:
a. Chop macadamia nuts finely.
b. Remove skin from chorizo.
c. Crumble chorizo.
d. Cook gently in oil in frypan until chorizo has rendered.
e. Add macadamia nuts and cook until crunchy.
f. Remove to bowl to keep warm, wipe out frypan. - Cook scallops:
a. Clean and remove small outer muscle.
b. Heat frypan to medium.
c. Add EVOO
d. Sear scallops on both sides. - Serve:
a. Swoosh carrot puree onto plate.
b. Add scallops.
c. Spoon over chorizo oil.
d. Top with herbs (picked or finely chopped) - Clean down, including sweeping floor, wiping and sanitising cooktop and benches, washing and drying up, and cleaning and sanitising knives.
Intermediate French – Cheese souffle with green salad and vinaigrette
Note this is a risen souffle and not suitable to be transported home for consumption.

Ingredients
Souffle
- 20 g unsalted butter
- 15g finely grated parmesan
45g shredded cheddar cheese
- 1 tbsp plain flour
- 60ml (3 tbsp) milk
- Fat pinch salt
- Fat pinch pepper
- Small pinch nutmeg
- 1 large egg
- Chives
- Pinch of Cream of tartar
Salad and vinaigrette
- 2 handfuls salad greens
- 2 tsp neutral oil
- 1 tsp EVOO
- ¼ tsp Dijon mustard
- 1 tsp red wine vinegar
- ¼ golden shallot
- ¼ small anchovy fillet (optional)
- Salt and pepper
Method
- Get all ingredients and equipment.
- Grease ramekin and line with a small amount of grated parmeson.
- Make panada (base):
a. Melt butter, add flour, cook until it smells like shortbread.
b. Add milk and whisk over heat until smooth.
c. Continue whisking until thick and beginning to boil.
d. Remove from heat and add cheeses, salt pepper and nutmeg.
e. Cool for 10 minutes. - Make vinaigrette
a. Pour oil into bowl
b. Add mustard and salt.
c. Add anchovy if using, and crush.
d. Whisk
e. Add vinegar, shallot and a good grind of black pepper.
f. Whisk again
g. Set aside - Make souffle mix:
a. Whip egg white with cream of tartar until stiff peaks form. (If making more than 2 serves, do this in an electric mixer).
b. Add egg yolk and chopped chives to panada.
c. Add one third of panada to egg white and beat in.
d. Gently fold in remaining two thirds of panada using a spatula. - Bake souffle:
a. Pour mix into prepared ramekin and place in oven.
b. Bake for about 20 minutes or until risen and golden brown on top. - While souffle is baking, make green salad by adding greens to dressing in bowl and tossing until thoroughly coated.
- Plate: Put salad on one side of plate and place ramekin on the other.
- Clean down, including sweeping floor, wiping and sanitising cooktop and benches, washing and drying up, and cleaning and sanitising knives
Double Meal Prep: Chicken Ronsard, blanched greens and saffron rice (v – Cauliflower and White Bean Ronsard) and Slow cooked lamb shoulder with fig and pistachio salsa (v – Butternut Pumpkin)
Double Meal Prep
This class involves you preparing 2 meals to be finished on the oven or stovetop or reheated in the oven at home. Please bring:
- 1 x 350ml takeaway container for blanched greens (double if cooking 4 serves/meal)
- 1 x 350ml takeaway container for the salsa ingredients
- 1 x 650ml container for saffron rice
- 1 x 650ml container to take stock/liquid home for lamb
- 1 x 2l reheatable container with a lid for Chicken Ronsard (double if cooking 4 serves/meal)
- 1 x deep baking tray or casserole dish with lid for lamb – small (2 litre capacity) if you are cooking 2 serves per meal, or medium (3-4 litre capacity) if you are cooking 4 serves per meal.

Chicken Ronsard, blanched greens and saffron rice (v – Cauliflower and White Bean Ronsard)
Equipment
- Cutting board stabilized

Ingredients
Saffron rice pilaf
- 150ml chicken stock
- 30g butter
- 1 French shallot
- 100g long grain rice (jasmine or basmati)
- ¼ tsp saffron threads
- 1 bay leave
- 1 sprig thyme
Chicken Ronsard
- 400g chicken pieces
- Plain flour
- 1 tbsp EVOO
- 1 carrot
- 1 shallot
- 1 clove garlic
- 40ml brandy
- 150ml dry white wine
- 1 small tomato
- Bouquet garni (parsley stalks, thyme, bay leaf)
- 125ml cream
- Sprig parsley
- 2 handfuls green beans or other greens
- Salt and pepper
Method
- Preheat oven to 190C.
- Gather all ingredients and equipment.
- Blanch beans:
a. Top and tail.
b. Boil in salted water until done.
c. Refresh in iced water.
d. Put in plastic container. - Prepare rice:
a. Infuse saffron in stock over medium heat.
b. Melt 30g butter in saucepan.
c. Chop onion finely and add.
d. Cook until fragrant.
e. Add rice and cook for 2 minutes.
f. Pour stock over rice.
g. Add bay leave and thyme and season.
h. Bring to a fast simmer, then cover with a lid.
i. Put in oven for 12 minutes. - Prepare vegetables and herbs:
a. Finely dice carrot.
b. Finely dice shallot
c. Mince garlic
d. Deseed, peel and chop tomato.
e. (v – cut cauliflower into chunks) - Saute chicken (v – cauliflower):
a. Toss chicken (v – cauliflower) in flour, season.
b. Heat EVOO in frying pan and saute on both sides until golden.
c. Add carrot, shallot and garlic and cook until garlic is fragrant.
d. Add brandy and flame.
e. Add wine, tomato and bouquet garni, cover and simmer for 30 minutes or until chicken is tender.
f. Remove chicken pieces (v – cauliflower) to casserole dish. - Make sauce:
a. Add cream and boil to thicken.
b. Strain through sieve
c. (v – add white beans) - Pour sauce over chicken.
- Fluff rice and sit for a further 5 minutes, covered. Put in plastic container.
- At home, reheat all on stovetop, in oven (covered) or microwave.
- Clean down.
Slow cooked lamb shoulder with fig and pistachio salsa (v – Butternut Pumpkin)
This recipe is based on one in Yottam Ottolenghi’s “Ottolenghi Test Kitchen – Extra Good Things”. Note this is about a 4.5 hour cook at home (less for the vegetarian option)

Ingredients
Lamb
- 1 large onion
- 2 cloves garlic
- 10g fresh ginger
- ½ tsp ground coriander
- ½ tsp ground cinnamon
- ¼ tsp ground turmeric
- Big handful dill
- 1.5 tbsp EVOO
- Scant 1 tbsp apple cider vinegar
- 700g lamb shoulder, bone in (v – half a large butternut pumpkin and 60g dried red lentils)
- 1 cinnamon stick
- 4 cardamom pods
- 2 soft dried figs
- 250ml chicken stock (v – vegetable stock)
Fig and pistachio salsa
- 1 soft dried fig
- 20g pistachios
- ¼ lemon
- Handful dill
- Handful parsley
- 2 cups basmati rice, cooked (chef to prepare)
- Salt and pepper
Method
1.Gather all ingredients and equipment.
2. Prep vegetables and fruit:
- a. Cut onions into wedges
b. Roughly chop garlic
c. Peel and roughly chop ginger
d. Roughly chop 2/3rds of the dill
e. Quarter 2/3rds of the figs.
f. Dice remaining figs into 1cm dice
g. Cut lemon into wedges.
h. Chop pistachios.
i. Pick remaining dill and parsley
j. Bash cardamom pods - Put meat (v – pumpkin) in casserole/baking dish and pierce 10 or so small holes in it with the tip of a knife (v – score the top of the pumpkin in a cross hatch pattern).
- Make marinade and pour over meat ( v- pumpkin):
- Put the following into a blender and blitz to a coarse paste:
a. 1/3 of the onions
b. Garlic
c. Ginger
d. Ground spices
e. Chopped dill
f. Oil
g. Vinegar
h. ½ tsp salt and
i. ½ tsp white pepper - Pour over meat (v – pumpkin).
- Add other ingredients to the baking tray:
a. Remaining onion
b. Cinnamon sticks
c. Cardamom
d. Quartered figs
e. (v – dried lentils) - Put stock into container.
- Prep salsa ingredients (to finish at home – see below):
a. Toast pistachios gently in frypan.
b. Put salsa ingredients into container (separate) – diced figs, pistachios. ¼ lemon, picked dill and parsley. - At home:
a. Remove from fridge 2 hours before you want to start cooking.
b. Preheat oven to 140C.
c. Pour the stock into the pan, cover and roast for 4 hours (v – roast for 2 hours).
d. Turn heat up to 180C, remove foil and cook for 30 minutes (check at 20 mins) until lamb (v – pumpkin) is well browned and the sauce is a little reduced. - While lamb (v – pumpkin) is cooking, reheat rice and finish mixing salsa:
a. Squeeze lemon juice into container.
b. Mix in diced figs, pistachios, dill and parsley. - Clean down.
