Why methods?
We teach techniques, not recipes – because techniques are the building blocks of great cooking. All our chefs are either trade qualified or Le Cordon Bleu trained, and we teach the way we were taught – using a ‘see it, do it’ model. This means that for most classes our chef instructors use ‘running demos’ where they show you the skill and then you copy it – with assistance from your instructor as needed.  And in our express classes you will cook at the same time as the chef, following their lead.  We will give you an ingredients list and a method for each class, but you do not have to use it.
Our chefs will explain patiently and walk you through each class.  And if your dish doesn’t work out, that is OK – we run most classes 3 or 4 times a week so you can always come and try again! Failure is part of learning.

Salmon (v – tofu)
- 100g sashimi grade salmon (v – 120g firm tofu)
- 1 green onion/shallot
- 1 tbsp soy sauce
- 1 tsp toasted sesame oil
- 2 tsp rice wine vinegar
- 1 tsp toasted sesame seeds
Bowl
- 2 heaped tbsp podded edamame
- ¼ continental cucumber
- ¼ avocado
- 3 small red radishes or ½ small carrot
- 4 cherry tomatoes
- Microgreens
- 1 cup short grain rice (chef to provide)
- 1 tbsp sushi ginger
- 1 tbsp kewpie mayo
- 1 tbsp furikake
- Salt and pepper
- 1 cup sushi rice (chef to provide)
MethodÂ
- Gather equipment and ingredients.
- Marinate salmon (v – tofu) – cut into 1.5cm cubes and marinate with all listed ingredients.
- Prepare bowl ingredients:
a. Cube or slice avocado.
b. Wafer cut radish/carrot.
c. Quarter cherry tomatoes. - Plate:
a. Rice in bottom of bowl/container.
b. Group other toppings on top of rice.
c. Top with mayo, pickled vegetables and sprinkled furikake. - Clean down, including sweeping floor, wiping and sanitising cooktop and benches, washing and drying up, and cleaning and sanitising knives.

Ingredients
- 1 x 125g salmon fillet (v – 2 carrots, pinch cayenne pepper or big pinch Aleppo pepper, pinch nutmeg, 3 baby potatoes, 1 tbsp of truffle and mushroom mix (tartufi))
- 2 tbsp (about 40g) butter, melted
- 1 tbsp olive oil
- ¼ lemon
- Small handful parsley
- Small handful dill
- 1 clove garlic
- 6 cherry tomatoes
- Large handful green beans
- Salt and pepper
Method
- Tie back long hair, wash hands and wear an apron. Stabilise your cutting board using damp paper towel. Gather your ingredients and equipment.
- Preheat oven to 190c.
- Put a saucepan of water on the cooktop to boil. Add enough salt that it tastes like the sea.Â
- Prepare vegies and herbs:
- (v – cut baby potatoes in quarters, peel carrots and cut in half lengthways, then into pieces about 3cm long. Put into boiling water and set a timer for 8 minutes – when timer goes off, check if potatoes are done and carrots are medium soft. If not, cook for a little longer, testing regularly).
- Cut wedge of lemon in half crossways. Finely slice one half.
- Finely chop parsley and dill (together is fine).
- Cut the ends of the beans (‘top and tail’).
- Mince garlic.
- Put butter into oven for a minute or two until melted.
- Prepare the salmon – in a small bowl, mix just under half the butter with the juice from the half wedge of lemon and the garlic. Add salmon and turn to coat in the butter. Put on baking tray and pour remaining butter over.Â
- (v – prepare the carrots and potatoes – in a small bowl, mix just under half the butter with the spices, juice from the half wedge of lemon and the garlic. Add carrots and potatoes and toss to coat in the butter. Put on baking tray and pour remaining butter over.
- Put cherry tomatoes in a small ‘tray’ made from foil, add oil and place next to salmon (v – carrots and potatoes).
- Bake for 12 minutes for medium rare (15 minutes if you prefer well done). (v – bake until browned).
- While salmon (v – carrot and potato) is baking, cook your beans in boiling salted water until they are ‘done’ the way you like them. This will take about 3 minutes if you like some crunch, or about 5 minutes if you like them soft and not squeaky. While cooking, rinse or wipe out a small bowl and fill with iced water.
- When beans are cooked, put them straight into iced water. This will stop them cooking. Drain and rinse the saucepan and put the remaining butter and the cold beans in them with some salt and pepper.
- Clean down, and run all equipment through the dishwasher (leave cooktop out and the saucepan with the beans). Wipe and put all other equipment away. Quickly sweep your area.
- When salmon (v – carrot and potato) is done, remove from oven and sprinkle over herbs. Turn cooktop to medium and heat beans quickly.
- Plate and cover with foil/put into storage container.
- Run all remaining equipment through dishwasher and scrape, clean, squeegee and sanitise bench. Put remaining equipment away.

Ingredients
Pickled cucumber with ginger
- 2cm piece ginger (about 20g)
- ½ tsp chilli flakes
- ½ a Lebanese cucumber
- ½ tsp flaked salt
- 2 tsp sugar
- ½ tsp rice vinegar
- ½ tsp soy sauce
- ½ tsp sesame oil
- Pinch toasted white sesame seeds
Spicy edamame
- 2 tsp garlic flavoured oil
- 100g precooked edamame beans, in their pods
- ¼ tsp chilli flakes or shichimi togarashi
- ¼ tsp ground black pepper
- Pinch salt
Potato takoyaki
- 100g (1 medium) baby potato
- 1 tbsp cornflour
- Pinch salt
- ½ cup vegetable oil
- 20ml (1 tbsp) takoyaki or okonomiyaki sauce (v – use vegetarian version of sauce)
- 20ml (1 tbsp) Kewpie mayo
- Pinch bonito flakes (about 2g) (katsuobushi) (v – omit)
- Pinch shredded nori (about 1g)
Method
- Tie back long hair, wash hands and wear an apron. Stabilise your cutting board using damp paper towel. Gather your ingredients and equipment.
- Make pickled cucumber:
a. Grate ginger into medium bowl.
b.Add chilli, salt, sugar, vinegar, soy sauce and sesame oil.
c. Put the flaked salt on the cutting board and roll the cucumber in it to score/scrape the skin a little.
d. Wipe off the salt with paper towel.
e. Bash the cucumber (not with your knife please) to crush it a bit – do not break it apart. Cut into bitesize pieces.
f. Add to the bowl, mix to combine. Place into sealed container and put in fridge to marinate for about an hour.
g. Rinse the mixing bowl. - Make spiced edamame
a. Gently heat garlic oil in saucepan on low heat.
b. Add edamame.
c. Add ¼ tsp chilli flakes or shichimi togarashi, ¼ tsp ground black pepper and a pinch of salt. Taste for seasoning.
d. Put on plate covered in foil/in storage container.
e. Wipe out saucepan. - Make potato takoyaki:
a. Heat a saucepan of water.
b. Peel and cut potatoes into chunks, wash, and boil them on medium until a fork goes through them easily.
c. Drain and mash in a medium bowl with a fork while hot.
d. Add salt and cornflour.
e. Roll into 4 small balls.
f. Heat a little oil in the bottom of the saucepan over medium heat. Add balls and cook until brown.
g. Place on plate with edamame, cover with foil/into storage container. - Clean down, and run equipment through the dishwasher (leave plate with potato balls, takoyaki/okonomiyaki sauce, mayo, bonito flakes and seaweed laver). Wipe and put cooktop and all other equipment away. Scrape, clean and squeegee bench. Quickly sweep your area.
- Serve dish:
a. Top potato balls with Takoyaki/okonomiyaki sauce, mayo, bonito flakes and shredded nori.
b. Add pickled cucumber. - Run all remaining equipment through dishwasher and final wipe and sanitise of bench. Put remaining equipment away.

Grilled beef salad with shoyu dressing (v – tofu)

- Piece of foil, about 15cm x 15cm
Ingredients
- 100g steak, at room temperature (v – 120g firm tofu (pressed if possible), 1 tsp soy sauce, 1/2 tsp garlic powder and a tablespoon of cornstarch)
- 10ml (2 tsp) vegetable oil
- 1 large handful salad mix (about 40g)
- ½ Lebanese cucumber
- 6 cherry tomatoes
- ¼ avocado
- ½ golden shallot
- ½ lemon
- 2 tbsp (40ml) soy sauce
- 2 tbsp (20ml) vegetable oil
- ½ tsp (2.5ml) sesame oil
- 1 tbsp (20 ml) mirin
- 10 g (1/2 tbsp) white sugar
- 3 tsp (15ml) rice vinegar
- 1 tsp (3g) white sesame seeds
- Salt and pepper
Method
- Tie back long hair, wash hands and wear an apron. Stabilise your cutting board using damp paper towel. Gather your ingredients and equipment.
- Season the steak with salt and pepper (v – cut tofu into cubes, drizzle with soy sauce and mix, season cornstarch generously, add garlic powder, toss tofu in cornstarch).
- Prepare the salad in a bowl:
a. Finely slice radish
b. Dice or finely slice avocado
c. Deseed (if you wish) and finely slice cucumber
d. Add salad mix and tomatoes. Do not toss.
e. Very finely chop (mince) the onion and put in small container for the dressing. - Cook the steak (v – tofu):
a. Heat frypan on high heat, when hot add 1 tbsp vegetable oil.
b. Sear steak for about 3 minutes on both sides to medium rare (53c). Remove to cutting board to rest. (v – fry tofu in a single layer. Let a golden crust form on each side for a few minutes before turning. A fork may be the easiest way to flip the tofu).
c. Rest the steak on the cutting board under some foil. Leave the tofu in the pan covered with foil with the heat off to keep it warm.
d. While the steak rests, make the dressing. - Make the dressing:
a. Add to the shallot the soy sauce, 1 tbsp oil, miring, sugar and rice vinegar.
b. Squeeze in lemon juice and sesame seeds and whisk together. - Cut the steak into slices.
- Plate the salad by placing onto plate/into storage container, placing steak (v – tofu) on top.
- Clean down, and run equipment through the dishwasher (leave steak, salad and dressing). Wipe and put cooktop and all other equipment away. Scrape, clean, squeegee and sanitise bench. Quickly sweep your area.
- Pour the dressing over the steak, or if taking the salad home you can keep the dressing separate in a lidded container.
- Run dressing container through dishwasher and put away.

Ingredients
- ¼ onion
- 1 spring onion/scallion
- 120g thin pieces of steak, a little bit frozen (10 minutes in the freezer should do it)
- 3 tbsp dashi granules
- 1 tbsp sake
- 1 tbsp mirin
- 1 ½ tbs soy sauce
- 2 tsp sugar
- 1 cup cooked Japanese rice (sushi rice/uruchi-mai) – chef to cook
- 10g pickled red ginger
Method
- Tie back long hair, wash hands and wear an apron. Stabilise your cutting board using damp paper towel. Gather your ingredients and equipment.
- Prepare your vegies:
a. Slice onion.
b. Slice spring onion on the diagonal (cut off stem, pull off ends of green part). - Cut meat into slices about 5cm wide.
- Into cold wok/frypan, add:
a. Dashi
b. Sake
c. Mirin
d. Soy sauce
e. Half the sugar. - Stir to dissolve the sugar.
- Add onions and spread over bottom of pan.
- Add meat and spread over onions.
- Cover with a lid. Heat to medium and cook for about 4 minutes until meat is brown.
- Use a spoon to skim off any scum.
- Sprinkle with sliced spring onions.
- Put rice in serving bowl/storage container.
- Top with beef and onion mix and drizzle over any extra sauce.
- Top with picked red ginger. Cover with a teatowel while you clean down.
- Clean down, and run all equipment through the dishwasher. Wipe and put cooktop and all equipment away. Scrape, clean, squeegee and sanitise bench. Quickly sweep your area.

Almond croissant

Ingredients
- 1 day old all butter croissant
- 1 small handful flaked almonds
- About 1 tsp icing sugar
Crème patissiere
- 125 ml whole milk
- ½ tsp vanilla extract
- 25g caster sugar
- ½ egg (use the other half for the frangipane below)
- 15 g cornflour
- 1 pinch salt
Frangipane
- 2 tbsp caster sugar
- 2 tsp rum or vanilla extract
- 2 tbs water
- 80g almond meal
- Fat pinch salt
- 2 tbsp unsalted butter
- ½ egg
Method
- Preheat oven to 180C.
- Gather all ingredients and equipment.
- Prepare crème patissiere:
- Heat milk and vanilla in small saucepan until nearly boiling.
- Whisk together in a bowl the sugar, egg, cornflour and salt.
- Pour a little hot milk mixture onto egg mix and beat. Pour over remaining milk mix. Rinse saucepan and return combined custard base into saucepan.
- Cook over medium heat, beating continuously until thickened. Reduce heat a little and continue to cook, beating, until the flour taste is cooked out.Â
- Put in container, cover with baking paper or clingfilm to prevent a skin from forming.
- Put in fridge.
- Prepare frangipane: beat together the following in a bowl using a spatula:
- 2 tbsp caster sugar
- 1 tsp rum or vanilla extract
- 2 tbs water
- 80g almond meal
- Fat pinch salt
- 2 tbsp unsalted butter
- ½ egg
- Fill croissant:
- Place on lined baking tray.
- Slice almost all the way through horizontally and open out.
- Spoon in about 2 tbsp frangipane
- Top with about 2 tbsp crème pat
- Close croissant.
- On top of croissant, spoon over another 1 to 2 tbsp frangipane
- Press flaked almonds into frangipane
- Cook for about 10 minutes until frangipane has started to melt and flaked almonds have started to brown.
- Dust with icing sugar and eat warm.
- Final clean down, including sweeping floor, wiping and sanitising cooktop and benches, washing and drying up, and cleaning and sanitising knives.
Almond cookies (Brutti ma Buoni) – gluten free
Makes about 8 cookies

Ingredients
- 70g (about ¾ cup) almond flour
- 30g egg whites (about 1 eggs worth)
- 65g (heaped ¼ cup) caster sugar
- ½ tsp (2.5ml) vanilla essence
- ½ tsp (2.5ml) almond extract (optional)
- 15g (about 2 tablespoons) pure icing sugar
Method
- Tie back long hair, wash hands and wear an apron. Gather your ingredients and equipment.
- Preheat oven to 180c.
- Line your baking tray with baking paper.
- Put icing sugar in small bowl.
- Pour your egg whites into medium bowl and whisk until frothy (whisking is optional but it makes the biscuits lighter).
- Add to egg whites the almond flour, caster sugar, vanilla essence and almond essence and mix until thoroughly combined – do not beat.
- Spoon a teaspoon’s worth of mixture into a bowl of icing sugar. Roll to coat
- Place biscuits onto the baking tray – you can share the tray with up to 3 others.
- Put in oven. Set a timer for 13 minutes.Â
- Clean down, and run all equipment through the dishwasher. Wipe and put equipment away. Quickly sweep your area.
- When timer goes off, check the biscuits – they may need another 2 minutes. The outsides should look and feel crispy but the biscuits should ‘give’ when very gently pressed. Remove from baking tray and set aside to cool.
- Run baking tray and any remaining equipment through dishwasher and scrape, clean, squeegee and sanitise bench. Put remaining equipment away.
- Pack biscuits into storage container. These will keep in the cupboard for about a week. (If eating in the dining area, please sweep up after yourself and wash and put away your dishes/cutlery/glassware).
Notes:
You can use icing mixture instead of pure icing sugar (sometimes this is easier as icing mixture doesn’t clump unlike pure icing sugar which can get very lumpy). Just check it’s gluten free if that is important (most brands are).
Double meal prep – chicken saag and French roasted lamb shoulder

This class involves you preparing 2 meals to be finished on the oven or stovetop or reheated in the oven at home. Please bring:
- 2 x 650ml container (4 x 650ml container if making 4 serves/meal) for the rice and parboiled potatoes
- 1 x 4 litre capacity container with a lid for the cooked curry (you will reheat this on the stove top or in the oven at home).
- 1 x deep baking tray with lid – small (4 litre capacity) if you are cooking 2 serves per meal, or medium (6 to 8 litre capacity) if you are cooking 4 serves per meal.
Otherwise, you can buy ‘containers’ packs on our website for a couple of dollars each.Â
Chicken saag  (v – paneer)
Note: This is excellent with some Greek yoghurt with a bit of mint, sugar, salt and lime juice, and some chopped tomato, red onion and cucumber. You can also make it with lamb shoulder – just double the cook time.

Ingredients
- 350g chicken thigh fillets (v – 300g paneer)
- 250g frozen pureed spinach, defrosted
- 1 tbsp ghee or butter
- ½ onion
- ½ tomato
- ½ green chilli
- 2 tbsp ginger garlic paste
- ¼ tsp cumin seeds
- Small bay leaf
- 1 green cardamom pod
- 1 clove
- Fat pinch chilli powder
- ¼ tsp amchur (dried mango powder, available at coles)
- ½ tsp garam masala
- Salt and pepper
- 2 cups of steamed basmati rice (chef to provide)
Method
- Get all ingredients and equipment.
- Prepare vegetables:
a. Peel and finely chop onion.
b. Finely chop tomato
c. Finely slice green chilli - Cut and cook chicken (v- paneer):
a. Dice chicken (v- paneer) into bite sized pieces
b. Sear in frypan over high heat. (v – remove paneer)
c. Add a little water and simmer, covered for about 15 minutes until almost cooked. - Make base for curry sauce
a. Heat ghee/butter in frypan.
b. Fry cumin seeds, cardamom, cloves and bay leaves until the cumin spits a little.
c. Add onions and fry until golden.
d. Add ginger/garlic mix and green chilli.
e. Add powdered spices (garam masala, amchur, red chilli powder) and ¼ tsp salt.
f. Add tomatoes and spinach. - Finish curry sauce.
a. Add chicken (v- paneer) to spinach and mix.
b. Add hot water if needed to loosen sauce – it should not cling to the chicken (v- paneer).
c. Bring to a simmer and cook for 6 to 10 minutes. - Package curry and rice separately to take home.
- Clean down, including sweeping floor, wiping and sanitising cooktop and benches, washing and drying up, and cleaning and sanitising knives.
- At home, reheat in oven or on stovetop until warmed through.
- Serve with rice.
French roasted lamb shoulder (v – mushroom, lentils and pumpkin)

Ingredients
- 8 cloves garlic
- 1 brown onion
- 2 large potatoes
- 350g piece of lamb shoulder (v – half a tin of lentils, half a butternut pumpkin, 4 swiss brown mushrooms)
- 1 tsp herbs de Provence
- 1 tsp oregano
- 2 small sprigs rosemary
- 1 cup water
- 1 cup dry white wine
- 2 tbsp EVOO
- 2 tbsp neutral vegetable oil
- 1 tbsp flaked salt
- Black pepper
Method
- Get ingredients and equipment.
- Prepare vegetables
a. Cut onion into wedges
b. Slice 4 cloves of garlic thinly.
c. Strip rosemary leaves.
d. Cut potatoes into bite sized chunks.
e. (v – drain lentils, peel pumpkin and leave in big pieces, cut or tear mushrooms in half). - Parboil potatoes
a. Put in a saucepan with cold water, add salt.
b. Bring to boil.
c. Cook for about 5 minutes or until a knife goes into the potatoes with a little resistance.
d. Drain and allow to dry in the saucepan.
e. When dry, toss in vegetable oil and put into takehome container. - Prepare roasting tray
a. Put 4 whole garlic cloves and all the onion into the bottom of the roasting pan.
b. Put lamb (v – lentils, pumpkin pieces and mushroom) on top of garlic and onions.
c. Poke the paring knife into the top side of the lamb in about 10 spots and push a bit of rosemary and a slice or two of garlic into each incision.
d. Rub lamb (v – pumpkin) with combined herbs de Provence, salt, pepper and half the EVOO.
e. Put water, wine and rosemary sprigs in the base of the pan.
f. Drizzle remaining EVOO over the top.
g. Cover with a double layer of foil. - Clean down, including sweeping floor, wiping and sanitising cooktop and benches, washing and drying up, and cleaning and sanitising knives.
- At home, roast at 160C for about 2.5 hours covered until the meat pulls apart with a fork. Remove foil, turn up heat to 200, add potatoes to tray and roast for another 35 minutes or until the potatoes are browned. (v – roast uncovered for about 50 minutes until pumpkin is soft. Turn up heat to 200, add potatoes to tray and roast for another 35 minutes or until the potatoes are browned.) Â
- Rest meat, covered, for 10 minutes before serving.
