This Argentinian sauce is great on bbq’d and roasted meats, chicken and seafood, and is also lovely as a salad dressing.
- 125ml extra virgin olive oil
- ½ cup parsley, finely chopped
- 4 cloves garlic, finely chopped
- 1 red chilli, deseeded and finely chopped
- 1 tsp dried oregano
- 1 tsp flaked salt
- 3 good grinds of black pepper (or about ½ tsp)
- Sherry vinegar or red wine vinegar to taste
Mix all ingredients, allow to sit for about 15 minutes or up to 24 hours before consuming. Can be used as a marinade or dressing.
